Birdbake-Biscuit Pot Pie

Ingredients: (Hit your return key to start a new line)
1 16 oz. bag of frozen mixed vegetables

1 c. chopped cooked chicken or turkey

1 can cream of chicken soup (10 3/4 oz)

1 1/4 c. biscuit mix ("all purpose baking mix")

1 large egg

1/2 c. milk.

Directions:
Preheat oven to 400 degrees F. Combine vegetables, "bird bits", and soup in a 9 inch pie plate. In a separate bowl, combine remaining ingredients. Pour over the mixture in the pie pan, and bake approx. 30 minutes, until golden brown.

Other suggestions and comments:
It's a different pie whenever you change the vegetable blend! A natural for using up turkey remnants.

2 tins of canned chicken or tuna (drained) would probably also work nicely, for a change of pace.

I like the recipe 'cuz even the little ones can help assemble it; just make sure they don't try to pull it out of the oven!
My son has always been Adventurous in that respect, and soon learned why we use hot mitts! Sometimes the child's hand is quicker than the parent's eye; be ever-vigilant.
