  • French : from a diminutive of Bouille, a topographic name for someone who lived by a marsh, Old French bouille (a derivative of boue ‘mud’, of Celtic origin), or for someone who lived by a birch grove, from the Old French dialect term bouille (from Late Latin betul(l)ia, a derivative of bettius ‘birch’). Bouillion is the more common spelling in LA; elsewhere the spellings Bouillon and Boullion predominate.
