A simple bake in the oven transforms its insides into a healthful and fun pasta substitute. You can serve it just as you would spaghetti, topped with marinara or another sauce. But it also makes a fun side dish, something so easy to prepare, a good recipe to have in your hip pocket this time of year.
Simple Spaghetti Squash
1 spaghetti squash
1-2 teaspoons extra virgin olive oil
½ teaspoon salt
¼ teaspoon dried oregano
sprinkle of Parmesan cheese, optional
Preheat oven to 425 degrees. Place the whole squash in a baking dish and bake 30-60 minutes, depending on the size of your squash. You will know it is done with the squash yields to gentle pressure.
Slice the squash in half, being careful since the inside will be hot.
Remove the seeds, then taking a fork, gently shred the squash insides. Place in a medium bowl.
Remove all the squash threads, then toss with the olive oil, salt, oregano and Parmesan cheese, if using.
Serve immediately.
Serves 4 as a side.
