Watermelon Sorbet

Total time: 3 hours 35 minutes
Serves 4
Ingredients:
- 4 cups seedless watermelon, chopped
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lime juice
Instructions:
- Remove the rind of a seedless watermelon and chop it into chunks.
- Combine granulated sugar, water and lime juice into a saucepan, and heat over medium until dissolved.
- Pour the heated sugar mixture into a blender, and add in the watermelon chunks. Blend until smooth.
- Pour the watermelon mixture into a large bowl, and chill in the refrigerator for 3 hours.
- Spoon the chilled watermelon mixture into an ice cream maker, and allow it to run for the allotted time, approximately 15 minutes.
- Transfer the mixture into a bread loaf pan and cover the top with plastic wrap.
- Freeze overnight.
No-Bake Chocolate Eclair Dessert

Ingredients:
- 2 small boxes vanilla instant pudding
- 3 1/4 cups milk
- 8 ounce container non-dairy whipped topping
- 14.4 ounce box graham crackers
- 1/3 cup cocoa powder, unsweetened
- 1 cup granulated sugar
- 1/2 cup butter
- 1 teaspoon vanilla extract
Instructions:
- Combine the instant pudding with 3 cups of milk. Beat until completely combined.
- Add in the non-dairy whipped topping and stir until combined.
- Line the bottom of a 9-by-13-inch glass baking dish with a layer of graham crackers.
- Cover the graham crackers with half of the pudding mixture.
- Add another layer of graham crackers, followed by the remaining pudding.
- Top with a third layer of graham crackers and set the dish aside.
- Combine the unsweetened cocoa powder, the remaining milk and the sugar in a saucepan, then bring the mixture to a rolling boil. Allow to boil for 1 minute, stirring continuously.
- Remove the saucepan from the heat, and allow the mixture to cool for 1 minute.
- Add in the butter and vanilla and stir until melted and combined.
- Cover the top graham cracker layer with the chocolate topping.
- Refrigerate overnight.
Strawberry Icebox Cake

Ingredients:
- Graham crackers
- 1 pint heavy whipping cream
- 8 ounces cream cheese
- 5 tablespoons granulated sugar
- 1 1/2 teaspoons vanilla
- 1 pint strawberries, sliced
- 1/2 pint strawberries, halved
- Chocolate syrup
Instructions:
- Line the bottom of a 9-by-9-inch glass pan with graham crackers.
- Pour the heavy whipping cream in a large bowl, and beat until stiff peaks form.
- Add in the cream cheese, granulated sugar and vanilla, and stir until smooth.
- Spread 1/3 of the cream cheese mixture over the graham crackers.
- Cover the cream cheese mixture with 1/3 of the sliced strawberries.
- Repeat this process add additional layers of graham crackers, cream cheese mixture and sliced strawberries.
- Refrigerate for 1 hour.
- Top with strawberry halves and drizzle with chocolate syrup before serving.

- 1 box Tagalong Girl Scout cookies, chilled
- 2 tablespoons utter, melted
- 1 1/2 cups heavy whipping cream
- 8 ounces cream cheese, softened
- 1/2 cup creamy peanut butter
- 1/3 cup granulated sugar
Instructions:
- Chop the Tagalong cookies into a fine crumble using a knife, pastry cutter or in a food processor.
- Combine the crumbled cookies and melted butter in a bowl, and stir until completely combined.
- Press the mixture into four glass bowls, pressing it into the bottom. Set the bowls aside.
- Pour the heavy whipping cream in a large bowl, and beat until stiff peaks form.
- Reserve 1 cup of the whipped cream for the topping, and set the main bowl of whipped cream aside.
- Stir together the peanut butter and cream cheese in a separate bowl until smooth.
- Add in the granulated sugar and stir until completely combined.
- Fold the whipped cream into the peanut butter mixture, and spoon the mixture into the four bowls.
- Chill in the refrigerator for 2 hours.
