Follow this recipe for a delicious stir-fry with shredded beef. It's a quick, easy, and delicious way to serve a hearty dinner to your family.

Ingredients:

  • 1 tbsp sesame oil
  • 1 clove garlic, crushed
  • 1 medium carrot, cut into matchsticks
  • 4 oz baby sweetcorn, cut into quarters
  • 1 courgette (approx. 4oz), cut into matchsticks
  • 10 oz beef fillet or rump steak, cut into very fine strips
  • 1 tbsp corn flour
  • 5 fl oz beef stock
  • 2 tbsp dark brown sugar
  • 2 tbsp soy sauce
  • A few drops of tabasco sauce
  • 1 tbsp sesame seeds

Directions:

  1. Heat the sesame oil in a wok and stir fry the garlic, carrot, sweetcorn and courgette for 3-4 minutes.
  2. Add the beef and continue to stir fry for 4-5 minutes.
  3. Mix the corn flour together with a tablespoon of water, and stir into the beef stock.
  4. Stir this into the pan together with sugar, soy sauce, a few drops of tabasco, and sesame seeds.
  5. Bring to a simmer and cook until slightly thickened.
  6. Ensure that your vegetables remain fresh and crunchy.
  7. Serve the beef with rice for a real family favorite.

My son Nicholas was the inspiration for my books because he was a really fussy eater, but now he’ll eat almost anything. He likes to make this quick and easy beef stir fry for his flatmates at university.

  1. First, heat the sesame oil in a wok, and stir fry the garlic, carrot, sweet corn, and courgette [zucchini] for three to four minutes.

  2. Add the beef, and continue to stir fry for four to five minutes.

  3. Mix the corn flour together with a tablespoon of water, and stir into the beef stock.
